In the 18th century, like today, the truffle of Piemonten was one of the finest in European courts.
Among the great admirers of truffle, there was the musician Giacomo Rossini, who defined it “ the Mozart of mushrooms”.

In the lands of Roero, Unesco heritage, it’s easy to find this fantastic tuber, with valuable qualities.
We also organize, for our guests, the “Great nocturnal simulated research in the teaching truffle area, with the Roero’s truffle hunters”. An interesting activity to discover some of the tricks of the best truffle hunters, escorted by the loyal truffle-dogs.
The truffle is a type of mushroom, belonging to the family of tubers. The truffle, in fact, is harvested in the woods and needs other truffle-plants, like holm oak, oak and hazel.
In cooking, is used raw, finely sliced with the appropriate truffle-cutter.
It’s perfect on eggs, that exalts its aroma and flavour, and so for the excellent truffle “tajarin” , the typical Piedmont egg pasta sautéed in butter with the final addiction of slices of truffle. Or on the fondue and on Albese raw meat or into risotto.
In the innovational restaurants, it’s possible to taste delicious dessert with truffle.
Personally, I tasted a panna-cotta ice cream with truffle and it’s a sublime combination. Moreover, the excellent wines of our area exalt this particular flavour, unique in the word.
